Brown Sugar Apple Blondies

It recently got pretty chilly here, like into the 40’s at night and 50’s during the day. Considering it was 90° degrees out practically last week, that drop in temperatures can be quite a shock on a person. No matter how drastically the temperature drops or how quickly, I am always hesitant to fire up the furnace. Flipping that furnace switch is like acknowledging winter is on it’s way. That, and my electric meter starts spinning like a roulette wheel, and we all know what that leads to.

Yes, Fall brings pretty pumpkins, road side stands brimming with fresh apples, and winter heating bills. Instead of admitting defeat and settling in for a long cold winter (and winter heating bills), I try to focus on the pretty produce and fall leaves, and every year in an attempt to deny the changing of seasons,  and try to warm the kitchen by baking some yummy treats.

Brown Sugar Apple Blondies

Brown Sugar Apple Blondies

Yield: 9
Prep Time: 15 minutes
Cook Time: 45 minutes
Total Time: 1 hour

Ingredients

  • 1/2 cup butter, softened
  • 1 cup brown sugar, firmly packed
  • 1 egg
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 2 cups of apples, peeled, cored, and diced (roughly, 2 medium sized Granny Smith, or 1 large- 20 oz.)
  • 1/2 cup chopped pecans

Instructions

  1. Preheat the oven to 350° degrees F. Cream the butter and sugar together in a large bowl. Add the egg and mix well.
  2. In another bowl, whisk the flour, baking powder, salt, and cinnamon together.
  3. Gradually mix the dry ingredients into the wet ingredients. Once combined, stir in the apples and pecans.
  4. Spread the batter into an 8x8 inch baking pan that has been lightly coated with non-stick cooking spray. Bake 40 to 50 minutes or until golden brown and set. Cool and cut into squares.

These Brown Sugar Apple Blondies were what I made this year, when I realized even after I got a sweater on and some wool socks, that the house was cold. These bars are an incredible treat, and so quick and easy to make. I was in no mood to entertain the thought of ice cream at the time, but in hindsight, these would be heaven with a scoop of vanilla ice cream and drizzle of apple cider caramel sauce.

Eventually, I did face reality, and turned on the furnace, in fact it was the same night I baked these Brown Sugar Apple Blondies 🙂 But these bars helped make the transition, easier, and a little sweeter.

I live in Mississippi, where we just entered that A/C-during-the-day-heat-at-night phase. But I love fall, so the limbo is a price I'm willing to pay. And these bars! One of my favorite things about fall is that we get to bake beautiful apple treats like these.
