It seems odd starting a story about a recipe in the dentists office, but the that is exactly where my Strawberry Trifle recipe came from.  Last week I had to make a trip to my dentist’s office for a cracked filling that was bothering me. When I checked in the hygienists and receptionists where all talking about this amazing strawberry trifle that they had at a company picnic a few days earlier. They were going on about how good it was, how easy it is to make, and how pretty it looks in a trifle bowl for like 5 minutes.  Once I was in my seat waiting for the dentist, the dentist’s assistant asked me if I would like a copy of the recipe for the strawberry trifle. There was no way I was going to turn down a recipe that had 5 women chatting about it 4 days later. I gladly accepted the recipe, and got my cracked filling fixed. How cool is my dentists office?

Strawberry Trifle Birthday Cake

My sons birthday was a few days after my dentist appointment, and he not being much of a cake eater always gets a nontraditional cake. I really wanted to take advantage of the fresh strawberries while we still have them, and have been a little stretched thin lately. I am also getting ready for house guests for the rest of the week, and farm planting continues to drag on because of all the rain.  So I was all for any recipe that only takes 20 minutes to put together, and if it was half as good as what the women at my dentists office were saying, I would be doing ok.

I took multiple “quality control bites” while assembling the trifle, and knew exactly why the woman at my dentists office were gushing over this recipe days later. It is good, really good. Like blow your diet and not even have regrets good.

I really wanted to share this with you before the 4th of July, and the end of strawberry season, which is wrapping up quickly here. The pics are not the greatest, because this was our actual birthday cake, and we had birthday festivities to get ready for. I think this is a great dessert for all those 4th of July picnics, and this has definitely earned a place in my favorite recipe collection!

 

Strawberry Trifle

Strawberry Trifle

Ingredients

  • 16 ounces cream cheese, softened
  • 2 1/2 cups powdered sugar
  • 12 ounces whipped cream or Cool Whip
  • 1 teaspoon vanilla
  • 1 angel food cake
  • 3 quarts fresh strawberries
  • 1/4 cup sugar
  • Fresh mint for garnish

Instructions

  1. Mix cream cheese and powdered sugar until creamy. Add whipped cream and vanilla.
  2. Cut angel food cake into small squares.
  3. Slice all but 3 or 4 strawberries. Gently mix sliced berries in bowl with 1/4 cup sugar; let sit for 15 minutes.
  4. Cover the bottom of a large trifle dish (clear, stemmed bowl) with a layer of the cake squares. Follow with a layer of cream cheese mixture, then strawberries.
  5. Alternate, ending with the cream cheese mixture on top. Garnish with reserved whole strawberries and mint leaves.
  6. Refrigerate for an hour before serving.
