Peanut Butter Chocolate Chip Cookie Bars

I have had a killer craving for anything chocolate peanut butter for a few days now. When I finally decided it was time to give in to my craving, I knew I needed something way more substantial than  Chocolate Chip Peanut Butter Cookies.  I needed something I could really sink my teeth into, something that could potentially carry a scoop of ice cream and drizzle of chocolate sauce. I needed  Peanut Butter Chocolate Chip Cookie Bars.

Sometimes the only way to get rid of a craving is to give into it, and that is exactly what I did.  I ate 2/3 of this pan of  Peanut Butter Chocolate Chip Cookie Bars. I am not even kidding. I was in such a food coma for the rest of the day, I was useless. My mother asked what I did all day Saturday and all I could say was ” Peanut Butter Chocolate Chip Cookie Bars”. They hit the spot so well I did not even have a guilt about eating so many, I just made a mental not to never let a craving go for so long again.

Peanut Butter Chocolate Chip Cookie Bars

Peanut Butter Chocolate Chip Cookie Bars

Prep Time: 15 minutes
Cook Time: 30 minutes
Total Time: 45 minutes

Ingredients

  • 2 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 sticks unsalted butter melted and cooled slightly
  • 3/4 cup packed light brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 large egg yolk
  • 2/3 cup creamy peanut butter
  • 2 teaspoons pure vanilla extract
  • 2 cups chocolate chips

Instructions

  1. Preheat the oven to 350 degrees F.
  2. Line a 13 x 9-inch baking pan with foil, letting the excess hang over the edges of the pan by about 1 inch (These overhangs will act as handles that will help you lift the bar easily from the pan in one piece when it is done baking). Spray the foil non-stick cooking spray.
  3. Sift together the flour, baking soda and salt in a medium bowl. In a large bowl, whisk the melted butter and sugars until combined. Whisk in the egg, egg yolk, peanut butter and vanilla until smooth. Using a spoon fold in the flour mixture with the butter mixture until just combined (be careful not to over mix the dough or the bars will come out tough). Fold in the chocolate chips.
  4. Scrape the dough into the prepared pan, pressing and smoothing the top with a rubber spatula. Bake until the top is slightly golden and firm to the touch and the edges are starting to pull away from the sides of the pan, 30 to 35 minutes. Let cool completely on a wire rack.
  5. Lift up on the foil overhang to remove the bar from the pan, and transfer it to a cutting board. Cut the bar into about 2-inch squares. store in an airtight container.

Yes, these  Peanut Butter Chocolate Chip Cookie Bars are perfectly at home with a scoop of ice cream on top and a drizzle of chocolate sauce, if you are suffering from a severe case of sweet cravings 😉
