Cinnamon Roll Steel Cut Oats

Ingredients

Steel Cut Oatmeal:

  • 1 tbsp butter
  • 1 cup Flahavan's Irish Steel Cut Oatmeal
  • 3 cups boiling water
  • 1 cup whole milk
  • 1 tbsp brown sugar
  • 1/2 tsp vanilla extract
  • 1/4 tsp salt

Brown Sugar Cinnamon Topping::

  • 2 tbsp butter melted
  • 3 tbsp packed light brown sugar
  • 1 1/2 tsp cinnamon

Cream Cheese Glaze::

  • 1 oz. cream cheese softened
  • 1 tbsp whole milk
  • 1/8 tsp vanilla extract
  • 5 tbsp confectioners' sugar

Instructions

STEEL CUT OATMEAL

  • In a large saucepot, melt the butter and add the oats. Stir for 2 minutes to toast.
  • Add the boiling water and salt, reduce heat to a simmer. Cover and keep at a low simmer for 25 minutes, without stirring.
  • Add the milk, brown sugar and vanilla to oatmeal. Stir gently to combine and cook for an additional 10 minutes, or until the oatmeal reaches the thickness you enjoy.

BROWN SUGAR CINNAMON TOPPING

  • In a small bowl mix butter, brown sugar and cinnamon until combined.

CREAM CHEESE GLAZE

  • Microwave cream cheese in a small bowl for about 10 seconds until just melted.
  • Stir in confectioners' sugar until combined.
  • Stir in milk and vanilla until creamy.

TO SERVE:

  • Place the desired amount of oatmeal in a serving bowl. Drizzle with some of the cinnamon-sugar topping, and then drizzle on top of that some of the cream cheese glaze. Serve warm.
