Pineapple Cookies

This Vintage cookie recipe comes from an RG&E recipe booklet put together by their Home Service Department. These light fluffy cookies Pineapple are a nice break from some of the richer Christmas cookies.

Ingredients

  • 1/2 cup butter
  • 1/2 cup brown sugar
  • 1/2 cup sugar
  • 1 egg
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 /2 cup crushed pineapple drained, reserve juice
  • 1/2 cup crushed nuts optional
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon reserved pineapple juice or lemon juice

Pineapple Glaze

  • 1 cup powdered sugar
  • 2-4 tablespoons reserved pineapple juice

Instructions

Cookies

  • Drain pineapple, reserving 3 tbsp juice.
  • Set pineapple and drained pineapple juice aside.
  • In a bowl, cream butter and sugar.
  • Add egg, mix well.
  • Add pineapple, 1 tablespoon pineapple juice, and vanilla, mix well.
  • Sift together flour, baking powder, and salt.
  • Stir sifted dry ingredients into creamed mixture.
  • Using a cookie scoop, drop cookie dough 2 inches apart on greased cookie sheet.
  • Bake at 350° for 10-12 minutes.
  • Remove cookie sheet from oven and let cool on wire racks 5 minutes before removing the cookies from the baking sheet to cool completlety on a wire rack.

Pineapple Glaze

  • Combine powdered sugar with just enough reserved juice to get a smooth glaze.
  • Frost cookies when cool.
