This year I decided to up my canning game (I have been pretty lazy about canning and freezing the past couple of years), but one of my biggest challenges with water bath canning has been finding a good set-up to actually hot water process the jars. I have a smooth top ceramic stove which isn’t good for canning. I tried the propane burner outside, which wasn’t convenient because I didn’t want to move my WHOLE process outside, and found myself hauling hot jars up and down stairs and trying to manage to separate cooking/processing locations (NOT FUN). Recently I started using a stockpot with a wire cake cooling rack as a diffuser, but I had a hard time maintaining the water level and not having scalding hot water splash all over my cooktop (NOT FUN AND DANGEROUS)
